Beef Short Ribs

Simple beef short rib recipe. Pair with Szechuan Green Beans.
Ingredients
- 8 Beef Short Ribs bone in
- 3 tablespoons Olive Oil
- 1 small Onion diced
- 4 cloves Garlic sliced
- 1 teaspoon Dried Thyme
- 1 teaspoon Salt
- 1 cup Beef Stock
Instructions
- Place 1 tablespoon of the oil into a large frying pan and place over high heat.
- Brown the short ribs on all sides and set aside.
- Set your instant pot to saute and add the remaining oil, followed by the onion, garlic, thyme, and salt. Saute for about 5 minutes until the onions have softened.
- Add the beef stock and mix well.
- Add the brown short ribs to the instant pot and put on the lid.
- Set to high pressure for 45 minutes for large ribs, 30 minutes for smaller ribs.
- Use the natural release method and remove the lid.
- Remove the ribs and place them into a lined roasting tray.
- Pour half the remaining liquid into a small saucepan and place over high heat to reduce. Boil until reduced by half, then blend with an immersion blender until smooth.
- Broil the ribs for 5 minutes, or until crispy.
- Serve the ribs drizzled with sauce and with a side of Keto Coleslaw.
