Buffalo Chicken Mac and Cheese

Really simple meal prep or dinner recipe. Spicy chicken and cheese.
Ingredients
- 1 pound 93% lean ground chicken
- 1 small yellow onion, peeled and minced
- 4 cloves garlic, peeled and minced
- ¼ cup Noble Made Medium Buffalo Sauce
- ¾ cup 2% plain Greek yogurt
- ¼ cup King Arthur Better Cheddar Cheese Powder
- 8 ounces Banza pasta shells, cooked according to package instructions
Instructions
- Heat a large nonstick skillet over medium-high heat. Add chicken, onion, and garlic and cook until chicken is no longer pink, about 8 minutes. Stir in buffalo sauce and cook 3 more minutes or until mixture starts to thicken.
- Whisk yogurt and cheese powder in a small bowl until smooth. Fold into chicken mixture and stir to mix well. Add cooked pasta and mix to coat. Allow to cool.
- Divide evenly into six airtight containers. Cover and store in refrigerator until ready to eat, up to 1 week.
- To serve, transfer to a skillet and cook over medium-low heat 5 minutes or until heated through.
