Chicken Parmesan Meat Loaf

Ingredients
- Extra-virgin olive oil, in a spray bottle, for greasing
- 1 pound ground chicken
- 4 garlic cloves, minced
- ¼ cup minced onion
- 2 tablespoons chopped fresh basil, divided
- 1 tablespoon chopped fresh parsley
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon onion powder
- 2 tablespoons grated Parmesan cheese
- ½ cup whole-wheat bread crumbs
- 1 egg
- ¼ cup heavy (whipping) cream
- 1 cup low-sodium tomato sauce
- ½ teaspoon garlic powder
- 1 tablespoon coconut aminos
- 1½ teaspoons evaporated cane sugar
Instructions
- Preheat the air fryer to 400°F. Spray an 8-inch baking dish with olive oil.
- In a large bowl, mix together the chicken, garlic, minced onion, 1½ tablespoons of basil, the parsley, salt, pepper, onion powder, Parmesan cheese, bread crumbs, egg, and cream until well combined. Press the mixture into the prepared baking dish.
- In a small bowl, mix together the tomato sauce, remaining ½ tablespoon of basil, the garlic powder, coconut aminos, and sugar and spread it over the top of the meat loaf.
- Cover the dish loosely with aluminum foil and place it in the air fryer basket. Cook for 15 minutes. Remove the foil and continue cooking for an additional 15 minutes, until bubbling and cooked through.
- Let sit for 10 minutes. Cut into slices and serve.
