Creamy Tuscan Soup

Ingredients
- 4 slices bacon
- 1 pound ground Italian sausage
- 4 tablespoons butter
- ½ medium onion, diced
- 2 cloves garlic, finely minced
- 3 cups chicken broth
- 4 ounces (113 g) cream cheese
- 2 cups kale, chopped
- ½ cup heavy cream
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Press the Sauté button and fry bacon until crispy. Remove bacon and chop into pieces, then set aside. Add Italian sausage to Instant Pot and sauté until no pink remains.
- Add butter and onion to Instant Pot. Sauté until onions are translucent. Add garlic and sauté for 30 seconds. Press the Cancel button
- Add broth and cream cheese to pot. Click lid closed. Press the Soup button and adjust time for 7 minutes.
- When timer beeps, quick-release the pressure and add remaining ingredients to pot. Leave Instant Pot on Keep Warm setting and allow to cook additional 10 minutes, stirring occasionally until kale is wilted. Serve warm.
