Ground Turkey and Sweet Potato Skillet

A quick, simple, high-protein dinner.
Ingredients
- Ground turkey (1 pound)
- Sweet potatoes (2 large, peeled and diced)
- Black beans (1 can, about 15 ounces, drained and rinsed)
- Cheese (1 cup shredded, such as cheddar or Monterey Jack)
- Taco seasoning (1 packet, or 2-3 tablespoons of homemade blend)
Instructions
- Peel and saute sweet potatoes.
- Once sweet potatoes are soft, add turkey and brown.
- Once turkey is browned, add remaining ingredients and season.
- Serve. Hot. And be hot serving it.
