Karaage Fried Chicken

Japanese fried chicken
Ingredients
- 2 pounds boneless chicken thighs (skin on if possible)
- 3-4 eggs depending on amount of chicken
- 1/3 cup coconut flour
- 1 teaspoon psyllium husk powder
- 1 tablespoon potato starch
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- Oil for frying
Instructions
- Combine the breading ingredients in a medium-sized bowl.
- Beat eggs and sit aside as wet station.
- Add all dry ingredients to a tray and mix together
- Preheat air fryer to 400 for 10 minutes.
- Coat each piece of chicken in egg mixture first and then coat in dry mixture. Lay on rack in air fryer.
- Spray each side of chicken with oil spray and fry for 20 - 25 minutes depending on size of chicken.
- After pulling chicken from air fryer, sprinkle with salt and serve with sauce of your choosing. (If you choose anything other than some sort of hot sauce, I hate you)
