Meatballs with Cabbage

Quick meatballs with cabbage.

Instructions

  1. in a prep bowl, combine ground beef, pork, italian seasoning, and S&P until well incorporated.
  2. Roll out ground meat into ~1.5” meatballs, sit aside on a baking sheet, should make about 14-18.
  3. Cut cabbage into quarters and remove core. Roughly chop each quarter into bite-size pieces.
  4. Place half of meatballs into bottom of pressure cooker, cover with half of cabbage.
  5. Season lightly with salt, pepper, and red pepper flakes.
  6. Repeat this process again with remaining meatballs and cabbage.
  7. Once all meatballs and cabbage are in pressure cooker, add coconut milk and butter on top.
  8. Put on lid and make sure pressure valve is closed.
  9. Pressure cook on high for 4 minutes.
  10. Once finished, release steam valve and then serve with LOTS of hot sauce.
