
Meatballs with Cabbage

Quick meatballs with cabbage.
Ingredients
- 1 lb grass fed ground beef
- 1 lb ground pork
- 1 tbsp Italian seasoning
- S&P to taste
- 4 to 6 cups thickly chopped green cabbage
- Cayenne pepper or red pepper flakes
- 1 can full fat coconut milk
- 2-4 tablespoons unsalted butter
Instructions
- in a prep bowl, combine ground beef, pork, italian seasoning, and S&P until well incorporated.
- Roll out ground meat into ~1.5” meatballs, sit aside on a baking sheet, should make about 14-18.
- Cut cabbage into quarters and remove core. Roughly chop each quarter into bite-size pieces.
- Place half of meatballs into bottom of pressure cooker, cover with half of cabbage.
- Season lightly with salt, pepper, and red pepper flakes.
- Repeat this process again with remaining meatballs and cabbage.
- Once all meatballs and cabbage are in pressure cooker, add coconut milk and butter on top.
- Put on lid and make sure pressure valve is closed.
- Pressure cook on high for 4 minutes.
- Once finished, release steam valve and then serve with LOTS of hot sauce.
