One Pan BBQ Chicken and Veggies

A simple base that you can serve with any number of sides. Rice, pasta, sweet potato mash, or whatever.

  1. In a large skillet over medium-high heat, cook bacon until crisp, about 10 minutes. Add chicken to the skillet and cook 8–10 minutes per side until browned and cooked through.
  2. Add pepper and onion strips and tomatoes. Cook, stirring occasionally, until mixture begins to boil. Reduce heat to low, stir in barbecue sauce, and simmer 5 minutes until sauce is heated through. Serve immediately.
