One Pan BBQ Chicken and Veggies

A simple base that you can serve with any number of sides. Rice, pasta, sweet potato mash, or whatever.
Ingredients
- 6 slices thick-cut bacon, chopped
- 6 (4-ounce) boneless, skinless chicken thighs
- 1 (16-ounce) bag frozen pepper and onion strips
- 1 (14.5-ounce) can diced tomatoes
- ½ cup barbecue sauce
Instructions
- In a large skillet over medium-high heat, cook bacon until crisp, about 10 minutes. Add chicken to the skillet and cook 8–10 minutes per side until browned and cooked through.
- Add pepper and onion strips and tomatoes. Cook, stirring occasionally, until mixture begins to boil. Reduce heat to low, stir in barbecue sauce, and simmer 5 minutes until sauce is heated through. Serve immediately.
