  1. Heat oil in a large skillet over medium heat.
  2. Add shrimp and cook for 3–5 minutes until just opaque; set aside.
  3. Add riced cauliflower, scallions, jalapeño, and garlic to the skillet. Sauté 2 minutes, then add brown rice and pineapple.
  4. Stir in soy sauce and fish sauce. Return shrimp to the skillet and cook, stirring constantly, for 2 minutes.
  5. Serve hot or at room temperature.
