Pineapple Shrimp Fried Rice

Ingredients
- 1 teaspoon olive oil
- 1 ½ pounds medium shrimp, peeled and deveined
- 1 ½ cups riced cauliflower
- 4 scallions, chopped
- 1 small jalapeño pepper, seeded and chopped
- 3 teaspoons minced garlic
- 2 cups cold cooked brown rice
- 1 ½ cups diced pineapple
- 2 tablespoons low-sodium soy sauce or coconut aminos
- 1 teaspoon fish sauce
Instructions
- Heat oil in a large skillet over medium heat.
- Add shrimp and cook for 3–5 minutes until just opaque; set aside.
- Add riced cauliflower, scallions, jalapeño, and garlic to the skillet. Sauté 2 minutes, then add brown rice and pineapple.
- Stir in soy sauce and fish sauce. Return shrimp to the skillet and cook, stirring constantly, for 2 minutes.
- Serve hot or at room temperature.
