A simple one-tray meal for an 11-month-old — roasted salmon and sweet potato with smashed peas. Everything cooks soft enough to squish between your fingers. Made from frozen Costco salmon, no thawing needed.

  1. Preheat oven to 425°F.
  2. Toss sweet potato wedges in half the olive oil, spread on a baking sheet, and roast 10 minutes.
  3. Add the frozen salmon fillet to the tray, drizzle with remaining oil, and roast another 20-25 minutes, until the salmon flakes easily and reaches 145°F internally and the potato is fork-soft.
  4. Meanwhile, steam or microwave the peas until soft, then lightly smash with a fork.
  5. Flake the salmon into small pieces, checking carefully for bones and skin.
  6. Serve sweet potato wedges as finger food alongside flaked salmon and smashed peas. Everything should squish easily between your fingers. Refrigerate leftovers 2-3 days.
