Turkey, Spinach, Sweet Potato, Black Bean Skillet

Another really simple and quick dinner for when you are lazy. Also it has everything you need in it to include a whole bunch of protein.
Ingredients
- 2 lbs ground turkey
- 450g sweet potato
- 1 bag spinach (10 oz)
- 2 cans black beans (undrained)
- 1 can diced tomatoes (14.5 oz, undrained)
- 226g reduced-fat cheddar cheese shredded
- Spray oil
- Salt, garlic powder, paprika, chicken bouillon to season
Instructions
- Cut potatoes into ~1-inch pieces and cook them in a large dutch oven with a little bit of spray oil.
- Once the potatoes have cooked down a little, add the ground turkey to the dutch oven and brown.
- Once the turkey is mostly cooked, add the beans and tomatoes — neither drained. This meal needs the liquid.
- Let it all cook together for a bit, then add the cheese and season (salt, garlic powder, paprika, and chicken bouillon).
- Lastly, add the spinach and cook with the lid on until the spinach wilts.
- Mix everything together and portion out.
