Buffalo Chicken Mac n' Cheese

High-protein mac n' cheese with a blended cottage cheese sauce and sweet buffalo chicken — meal-prep friendly and reheats creamy.
Ingredients
Sweet Buffalo Chicken
- 700g chicken breast
- 1 tsp paprika
- 1 tsp garlic salt
- 1 tsp onion powder
- 100ml Frank’s Red Hot buffalo sauce
- 30g honey
High Protein Cheese Sauce
- 330g 0% cottage cheese
- 40g light cream cheese (Philadelphia Lightest)
- 80ml low-fat milk
- 25ml buffalo sauce
- 30g low-fat cheddar (Aldi)
- 1 tbsp nutritional yeast
- 1 tsp onion powder
- 1 tsp garlic powder
Other
- 300g dry macaroni pasta
- 1 tsp salt
Instructions
- Boil macaroni in salted water until al dente. Drain and set aside.
- Add all cheese sauce ingredients (cottage cheese, cream cheese, milk, buffalo sauce, cheddar, nutritional yeast, onion powder, garlic powder) to a blender. Blend for at least 2 minutes until completely smooth.
- In a large bowl, combine cooked macaroni and cheese sauce. Toss until pasta is fully coated.
- Dice chicken breast into cubes. Season with paprika, garlic salt, and onion powder. Cook in a pan over medium-high heat until crispy and cooked through.
- Remove from heat. Add buffalo sauce and honey, toss until chicken is well coated.
- Divide mac n’ cheese and buffalo chicken evenly across 4 meal prep containers. Store in the fridge up to 5 days.
- To reheat: microwave covered for 2 min, then uncover and microwave 1 more min. Stir — sauce will return to creamy consistency once warmed.
