Instructions

  1. Boil macaroni in salted water until al dente. Drain and set aside.
  2. Add all cheese sauce ingredients (cottage cheese, cream cheese, milk, buffalo sauce, cheddar, nutritional yeast, onion powder, garlic powder) to a blender. Blend for at least 2 minutes until completely smooth.
  3. In a large bowl, combine cooked macaroni and cheese sauce. Toss until pasta is fully coated.
  4. Dice chicken breast into cubes. Season with paprika, garlic salt, and onion powder. Cook in a pan over medium-high heat until crispy and cooked through.
  5. Remove from heat. Add buffalo sauce and honey, toss until chicken is well coated.
  6. Divide mac n’ cheese and buffalo chicken evenly across 4 meal prep containers. Store in the fridge up to 5 days.
  7. To reheat: microwave covered for 2 min, then uncover and microwave 1 more min. Stir — sauce will return to creamy consistency once warmed.
