Egg Roll in a Bowl

Prep time: 10 min
Cook time: 25 min
Servings: 5
High-protein, high-fiber meal prep with ground turkey, coleslaw mix, and lentils in a ginger, garlic, and sriracha sauce.

NOTES: Start the lentils first and brown the turkey while they simmer. Undercook the cabbage so it keeps some bite after reheating. Keeps 4-5 days in the fridge. Top with scallions, an egg, or sesame seeds to freshen it up. Lentil fiber varies by brand, so check your bag's label.

Ingredients

Instructions

  1. Rinse the lentils and simmer in 3 cups of water for 20-25 minutes until tender but still holding their shape, then drain.
  2. While the lentils cook, brown the turkey in a large pan over medium-high heat, breaking it up, for 6-8 minutes until cooked through.
  3. Add the garlic and ginger and cook for 1 minute until fragrant.
  4. Add the coleslaw mix and soy sauce and cook for 4-5 minutes, just until the cabbage wilts but still has some bite.
  5. Stir in the lentils and cook for 2 minutes until hot.
  6. Off the heat, stir in the sriracha, sesame oil, lime juice, and scallions.
  7. Divide into 5 containers and refrigerate. Reheat for 90 seconds in the microwave.
