One-Pot Beef, Capsicum & Rice Skillet

A hearty one-pot dinner built on the Costco 85/15 ground beef pack with capsicum, onion, garlic, and diced tomatoes simmered in bone broth. Jasmine rice cooks right in the pot for a comforting, saucy skillet.

NOTES: Drain rendered beef fat to trim ~30-50 cal and 4-6g fat per serving. The 2 cups broth keeps it saucy — add more a splash at a time if the rice needs it. Leftovers hold 3-4 days refrigerated.

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium-high. Add the onion and cook until softened, ~4 min. Add the garlic and cook 30 seconds until fragrant.
  2. Add the ground beef, breaking it apart. Cook until browned, ~7 min. Drain excess fat here if trimming calories.
  3. Stir in the cumin, chili powder, smoked paprika, and salt. Toss to coat the beef.
  4. Add the sliced capsicum and cook 2–3 min until they start to soften.
  5. Stir in the diced tomatoes (with juice), dry jasmine rice, and bone broth. Bring to a boil, then reduce to low, cover, and simmer 18–20 min until the rice is tender and most of the liquid is absorbed. Stir once or twice to prevent sticking.
  6. Turn off the heat and let it sit covered for 5 min. Fluff and serve.
