One-Pot Kimchi Turkey Rice

A one-pot Dutch oven dish where jammy kimchi and browned turkey cook down together, then jasmine rice simmers right in beef bone broth until fluffy. Canned corn stirred in at the end cuts the kimchi tang with a little sweetness. High protein, big flavor, and everything happens in one pot.

  1. Heat the Dutch oven over medium-high. Add the ground turkey and brown, breaking it up, until no longer pink (~6–8 min).
  2. Push turkey to the side, add the onion and garlic, and cook until softened (~3 min).
  3. Add the chopped kimchi (and a splash of its juice) and cook down until jammy and slightly caramelized, ~4–5 min. Stir in the sesame oil.
  4. Add the uncooked jasmine rice and stir 1 min to toast lightly and coat.
  5. Pour in the beef bone broth, water, and soy sauce, scrape up any browned bits, and bring to a boil.
  6. Cover, reduce to low, and simmer 15 min until the rice absorbs the liquid and is tender. Don’t lift the lid early.
  7. Kill the heat, stir in the drained corn, cover again, and let sit 5 min. Fluff and serve.
