One-Pot Turkey & Golden Potato Skillet

Ground turkey, potatoes, carrots, and tomatoes simmered down in beef bone broth into a hearty, meal-prep-friendly one-pot dinner.

  1. Heat olive oil in a large Dutch oven or deep skillet over medium-high. Add ground turkey and break it up with a spoon. Cook until browned and no pink remains, about 7 minutes. Season with half the salt.
  2. Add onion and carrots. Cook until the onion is translucent and the carrots start to soften, about 5 minutes. Stir in garlic and cook 1 minute more until fragrant.
  3. Push everything to one side, add tomato paste, smoked paprika, oregano, and black pepper to the bare spot. Stir for 60 seconds until the paste darkens, then mix into the meat and vegetables.
  4. Add potatoes, diced tomatoes, bone broth, and remaining salt. Bring to a boil, then reduce to a simmer, cover, and cook until potatoes are fork-tender, about 20 minutes. Stir once or twice.
  5. Stir in corn. Uncover and simmer 5–8 minutes to reduce the liquid to a thick, stew-like consistency. Taste and adjust salt.
