One-Pot Turkey, Tomato & Corn Rice Skillet

Browned 93/7 ground turkey and jasmine rice simmered in bone broth with diced tomatoes, sweet corn, onion, and garlic. One pan, protein-forward, meal-preps into 4 servings.

NOTES: Liquid check — 1.25c rice wants ~1.9c total liquid. Undrained tomatoes add ~0.75–1c, so 1.75c broth is the safe start; add more 1/4c at a time if dry after the rice absorbs. Drain the corn to keep it from going soupy.

  1. Heat a splash of olive oil in a large skillet or Dutch oven over medium-high. Add onion and cook 3–4 minutes until softened. Add garlic and cook 1 minute until fragrant.
  2. Add ground turkey. Break it up and brown until no pink remains, about 6–8 minutes. Season with salt and pepper.
  3. Stir in the dry jasmine rice and toast 1 minute, coating the grains.
  4. Add diced tomatoes (with juice), drained corn, and bone broth. Stir and bring to a simmer.
  5. Cover, reduce heat to low, and cook 15–18 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat and rest, covered, 5 minutes. Fluff and serve.
