BBQ Pulled Chicken Plate with Roasted Sweet Potatoes, Broccoli & Veggie Slaw

Bone broth-poached chicken breast pulled and reduced with sugar-free BBQ sauce, plated with roasted sweet potatoes, broccoli, and a light veggie slaw. High protein, low fat, carb-forward from whole foods.
Ingredients
- 2.6 lb boneless skinless chicken breast
- 1 box (32 oz) Kirkland chicken bone broth
- 1 bottle (~18.5 oz) Sweet Baby Ray’s No Sugar Added BBQ sauce
- 750g sweet potatoes (150g raw per serving), cut into cubes
- 5 cups broccoli florets
- 1 jar pickled veggie slaw (10 servings, 10 cal each)
- Avocado oil spray, salt, pepper to taste
Instructions
- Poach chicken breast in bone broth over medium heat until cooked through (~20-25 min, 165°F internal).
- Remove chicken, pull with two forks. Reduce remaining broth as desired.
- Return pulled chicken to pot, stir in full bottle of BBQ sauce, simmer to coat and thicken.
- Toss sweet potato cubes and broccoli with avocado oil spray, salt, and pepper. Roast at 425°F for ~25-30 min, flipping once.
- Plate 1/5 of the chicken with roasted sweet potato, broccoli, and a scoop of veggie slaw on top.
