Peanut Butter Overnight Oats (Bulk Prep, Whey)

Prep time: 15 min
Cook time: 0 min
Servings: 6
Six servings of high-protein peanut butter overnight oats with sprouted rolled oats, Greek yogurt, whole milk, peanut butter powder, vanilla whey, honey, and frozen blueberries.

NOTES: Mixed in one big bowl and portioned by weight. The single-serving recipe scaled 5x, plus 5 scoops of Ascent vanilla whey, 5 tbsp of honey, and 700g of frozen blueberries, split into 6 servings. Made with One Degree sprouted rolled oats, which stay a bit chewier than quick oats. The berries thaw in the fridge and bleed a little juice into the oats. Needs at least 2 hours in the fridge, ideally overnight. Sets thick, so loosen with a splash of milk before eating. Best eaten within 4 days.

Ingredients

Instructions

  1. Weigh your empty large bowl and write down the number. In it, combine the oats, peanut butter powder, whey, and salt.
  2. Add the milk, Greek yogurt, and honey and stir until no dry pockets of powder remain.
  3. Fold in the frozen blueberries.
  4. Weigh the full bowl. Subtract the bowl’s weight; the batch should be about 3,130g. Divide by 6 to get your portion (about 522g).
  5. Weigh out each portion into 6 containers, cover, and refrigerate for at least 2 hours, or overnight.
  6. Stir before eating, adding a splash of milk if it’s too thick.
